(Note: I am cheating by reposting a tasting from the Golden Age, when we could afford such cheeses, i.e. August ’08. We’ve had it since, and it was still excellent.).
When a cheese is $31.99 a pound, 0.14 lb. of it had better go a long way.
We ate this cheese in tiny flakes with Acme bread and salumi from Boccalone (the orange and wild fennel salami, and the Soppressata).
A single crumbled piece tastes like dark underbrush and autumn rain, so I’d have to say yes, Virginia, it goes a long way.
